Pizza will continue to get featured frequently here on Foodie Fridays because it is so fun and pleasing, not only to the tastebuds but to the eye. Pizza combines the staff of life – bread, with all of the other great food groups; herbs, fresh veggies, meat and cheese.
This week we went simple; a couple air-fried chicken thighs that were fork pulled, along with purple onions, black olives and white cheese. The crust was sourdough like always but we mixed in some Italian herbs to the ferment, to spice things up a bit.
The sauce was the interesting bit, this go around. We were working / playing in the garden this morning and noticed all of the new growth on the Basil plants. No tomatoes yet in the garden, so Pesto seemed like the sauce of choice for this evening’s pies. We discovered some jarred pesto the last time we were in the big city at Costco and thought we would mix a bit of our homegrown with what we had in the jar.
It worked out beautifully. Fresh garden flavors, blended with a well made pesto in a jar. The crust was Focaccia-like and was the perfect base. The beautiful green pesto sauce went a bit brown in the 450 degree oven but it was still a beautiful pie.
