Foodie Friday – Park City Power Muffins

Vickie turned me on to a new baking product the other day that has me pretty excited. I sort of pride myself on my baking prowess and my made by hand philosophy, so I don’t usually hang out in the pre-mix aisle at the market. She found an exceptional pancake mix that has no preservatives. It’s made from whole grains and is enriched with a number of protein packed ingredients.

Kodiak, the small company in Park City, Utah that makes the product share a similar philosophy to ours at 3mph. Their motto: Food to navigate today’s Frontier. It does contain some dairy products but overall, it is an exceptional product that is as close to natural as a pre-pack product can get. Vickie made the muffins from the recipe on the back of the box and they were awesome. She added dried Cranberries and chopped Walnuts for more protein packed power.

Next up, Blueberry Yogurt Muffins with Wild Blueberries. Can’t wait to try making some pancakes too, next time we go camping.
